		<description>Coconut fat is a very healthy type of saturated fat, it is not long chain fatty acids as in animal food but good medium chain. It is not transformed in the liver and is assimilated as an energy source by the body (as a carb, bodybuilders use it a lot while on a low carb diet). It also contains lauric acid, an natural antibacterial agent, which is also found in mother&#039;s milk. It is also said to stimule the metabolism and nourish the thyroid gland.

That is just one extra reason to eat those delicious (just made them today) truffles. Cheers!</description>

Like you, I&#039;ve heard different things about them--lots of saturated fat, but I&#039;ve also heard that it isn&#039;t bad for us the way that other saturated fats are. I&#039;ve heard that coconut can make us happier (something about serotonin levels?) and I know that it is widely used as a &#039;cooling&#039; oil in Ayurvedic medicine (most oils are &#039;heating&#039;; cooling foods should ease inflammatory conditions). I probably eat it once or twice a month, so it&#039;s not very often. It&#039;s delicious and filling, and goes REALLY well with chocolate, I find, and we also eat it in Thai red curry every so often. Just keep trying it in your diet to see if you feel good or bad, and go by that. Your body should tell you if it&#039;s bad for you, I think. :)</description>
