Killer pumpkin waffles. Try them.

This past weekend I thought that making pumpkin waffles would be a good way to use up some leftover pumpkin puree that has been sitting in the fridge, so I began searching for a recipe. Before long I stumbled upon a blog called ‘Pumpkin Waffles Blog’, and after reading the comments on his Ultimate Pumpkin Waffles recipe, I knew I had to try them.

They did not disappoint! They are the best-textured waffle I’ve had, period. They have a lot more pumpkin than most recipes I looked at, and the flavour is perfectly balanced. Yum.

I made only one change to this recipe, which was subbing in a bit of buckwheat flour to replace some of the white flour, which I generally don’t like to eat often. They were delicious, and I didn’t notice a strong buckwheat flavour at all. Next time I’ll likely use more buckwheat flour, so they will be a bit healthier.

Pumpkin Waffles Recipe

1/4 C brown sugar
3Tbsp. cornstarch
1 C all purpose flour
1/4 C buckwheat flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1 3/4 tsp. cinnamon
2 tsp. ground ginger
1/4 tsp. ground cloves
1/4 tsp. ground nutmeg
2 large eggs
1 C milk
1 C pumpkin puree
4 Tbsp. unsalted butter (melted & warm)

Method
Preheat waffle iron.
Combine sugar & cornstarch, mix until no lumps remain. Add all other dry ingredients, mix well.
Separate eggs. Put whites into a small mixing bowl, and yolks into a medium-sized bowl.
Add pumpkin puree & milk to egg yolks. Mix and set aside.
Whip egg white with a hand blender until stiff peaks form (1.5-2 mins)
Pour melted butter into liquid mixture, stir well.
Add pumpkin mixture to dry ingredients, mix until just combined.
Slide egg whites onto batter, then fold them in carefully, until no white is visible.
Cook on lightly oiled/buttered waffle iron until golden and cooked through.

Then, feast.

We ate ours with maple syrup and Mediterranean yogurt. These waffles are very filling, and we had a few waffles left over, for an afternoon snack.

    Aww so pretty! I wish I had a waffle iron…unfortunately I’m a poor college student and have to stick to the pan-shaped breakfast options. It seems like all I eat lately is oatmeal with fuyu persimmons (not that it’s anything to complain about).

    Mary, I love oatmeal and fuyu persimmons! Definitely nothing to complain about :) I actually have a waffle iron because it was left in my old apartment when I moved in, so I inherited it. Thanks for reading!
